What is Japanese Nikkei cuisine?
“Nikkei” is the name given to Japanese people living in Peru. Like any other migrants who needed to adapt, so did their food, and that’s how Japanese Nikkei cuisine was born. It is an exotic mix between Peruvian and Japanese culture. Unlike the traditional Japanese cuisine, it introduces bold flavours characterised by its sourness and spiciness with Japanese cooking methods employed to create a new unique fusion. One of the major Japanese influences was the appearance of seafood in Peruvian cuisine, which is not this South American country’s staple food.

Meet the man behind the heavenly Japanese Nikkei dishes
Born and raised in Lima, the capital of Peru, Chef Sandro has always been into cooking since a very young age. His passion for culinary started by helping his mother cook homemade Peruvian food. After finishing a university degree in culinary and adventuring worldwide, his love for cooking extended to Japanese Nikkei, fine dining and omakase.
